Pumpkin Chocolate Chip Muffins

A healthy dessert full of protein.

Ingredients:⁣
  • 1 cup orange pumpkin puree
  • 1/3 – 1/2 cup of maple syrup
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 4 tablespoons of butter (almond would be perfect).
  • 1/4 cup of milk (without sugar).
  • 2 + 1/4 cups of oats
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 1/2 cup dark chocolate chips, save a few extra for topping
Cooking instructions:

Preheat the oven to 180 degrees and then prepare the muffin tray for 12 pieces.
Put all the liquid ingredients (pumpkin puree, maple syrup, eggs, butter, milk) in a blender and mix for about 30 seconds until it becomes a uniform mass of dough

Using a spoon, mix the chocolate pieces into the created dough and then pour into the #muffins pan, filling each mold about 3/4 full (so don’t overfill). Pour some chocolate chips on the surface and let it bake for about 22 minutes until it gets a brown color on the surface. After taking it out of the oven ,
let it cool for 10-15 minutes. They can be stored at room temperature in the beginning and after the first day it is advisable to put them in the refrigerator
