Instructions:
Marinate the cutlets with salt and pepper.
Mix the breadcrumbs with the Parmesan cheese in a medium bowl.
In another bowl, beat the egg whites.
Coat the chicken cutlets with the egg whites, then with the breadcrumb mixture, removing the excess.
Heat a large non-stick frying pan over medium heat. Add butter and olive oil.
When the butter has melted, add the cutlets and cook them for about 6 minutes on each side, until they are golden.
Served with lemon wedges. From the above amount, we get 4 portions.
